What is Testi Kebab?
Testi kebab is Cappadocia's most famous dish: lamb, tomatoes, peppers and spices slow-cooked inside a sealed clay pot over wood fire, then dramatically broken open at your table.
How It's Made
- Fresh lamb cubes (sometimes beef or chicken)
- Tomatoes, peppers, garlic, onions
- Herbs and traditional spices
- Sealed in clay "testi" pot with dough
- Cooked 2-4 hours in wood-fired oven
- Broken open at the table (with hammer!)

Vegetarian Version
Most restaurants offer vegetable testi kebab with eggplant, mushrooms, beans. Often better than meat version.
Tips
- Order 1 hour before dining (prep time)
- Share one pot between 2 people
- Reserve for cave restaurants
- The "breaking" happens 2-3 times per night — watch timing
- Ask for wine pairing — Kalecik Karası works well
What to Expect
Theatrical presentation: waiter brings sealed pot with flame on top, strikes it with hammer, pot cracks open dramatically. Food is tender, rich, smoky from the wood oven. Portions are generous.
Testi kebab is one dish every visitor should try at least once.
